 This wine’s intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018’s generous fruit is mere window dressing.  The 2018 Chablis Vaillons 1er Cru is laced with strong mineral and earthy tones that are such a signature. Savory herbs, menthol, licorice, citrus peel and a touch of reduction are all woven together in a Chablis of real class and nuance.  The 2018 Vaillons here is every bit as refined and zesty as the Montmains. The wine delivers a classy aromatic constellation of apple. pear, citrus zest, a complex base of chalky minerality and a topnote of dried flowers. On the palate the wine is deep, full-bodied and racy, with impressive complexity and cut, a lovely core and excellent grip and bounce on the long, poised and snappy finish. This is a bit more buttoned up today than the Montmains, so I would opt for tucking the Vaillons away in the cellar for a few years before starting to drink it in earnest.  The 2018 Chablis 1er Cru Vaillons is showing beautifully, mingling notes of white peach and spring blossom with hints of Meyer lemon, crisp green apple and pear. Medium to full-bodied, its satiny attack segues into a tensile, vibrant and nicely concentrated mid-palate, concluding with a saline finish. (WK)  (7/2020)
